Biscuit Cups
1packagerefrigerated biscuit doughmake sure it's dairy-free if eating d-f
1/2cupflourfor your surface, to roll out the biscuits
cooking oil sprayto spray the muffin pan
6slicescheddar cheeseregular or dairy-free
Instructions
Make the Meat and Sauce
Preheat oven to temp as instructed on biscuit package (usually 375 degrees F)
Brown the meat in a large skillet on medium-high heat, breaking up the meat so you don't have large chunks (if you want onions, add the chopped onions now); drain the grease if using a fattier beef
Add the ketchup (1/2 cup), brown sugar (2 Tbsp) and mustard (1/2 tsp)
Add the garlic powder (3/4 tsp) and black pepper (1/2 tsp)
Make the Biscuit Cups ... and Bake!
Spray a large 6-cup muffin tin with nonstick cooking oil
Open your package of refrigerated biscuits
Spread a little flour on a flat, clean surface
Pick up 1 biscuit dough piece and place on the flour then flip so the top has some flour on it
Use a rolling pin to flatten the biscuit dough until it's a little larger than a corn tortilla (it needs to be large enough to fit in the large muffin pan such that once it's filled with meat, a little hangs over all the way around the top
Place your flattened biscuit in the muffin cup and put enough meat mixture into the biscuit to fill it almost to the top. NOTE: you want to fill them one at a time to prevent the dough from shrinking back.
Repeat until you run out of biscuits or meat (note: most biscuit dough you buy contains 8; you can make 8 if you have 2 pans or re-use your one; or you can make 6 and bake the extra 2 biscuits at the same time you make your cups)
Top each with 1 slice of cheese (regular or dairy-free)
Bake in the oven for lowest amount of time shown on the biscuit package or until the biscuits are golden brown (usually 10-11 minutes…watch them; the amount of time needed depends on your oven)
Notes
Flatten and fill each biscuit one at a time to prevent the dough from shrinking back.
If you want to make these using 12 smaller muffin cups you can; cut each biscuit in half before rolling out and follow the other directions as provided.
You can substitute cheese slices with shredded cheese if you prefer or that's what you have on hand.
