Egg Roll Soba Noodle Bowl

Instructions
  1. Mince the 2 garlic cloves, grate the 2 inches of fresh ginger and slice the green onions/scallions (separate the white and green parts)
  2. Heat olive oil in a large skillet on medium high
  3. Add minced garlic cloves, grated fresh ginger and white part of scallions to the hot oil and sauté for 1 minute
  4. Add the ground pork; break up with a wooden spoon and cook until the pink color of the meat is gone
  5. Meanwhile, fill a pot with water and bring to a boil
  6. Add the slaw mix (pre-shredded cabbage and carrots) and stir until cooked down (about 4 minutes)
  7. When your pot of water has come to a boil, reduce heat to simmer and add the soba noodles (save the flavor packets); cook the noodles for 3 to 3 1/2 minutes; drain and rinse lightly
  8. Add the 2 Fortune noodle flavor packets and 1 1/2 Tbsp toasted sesame oil to the skillet and stir
  9. Add the cooked, drained noodles to the skillet and stir/toss well
  10. Serve in bowls and garnish with the green slices of the scallions and sesame seeds. Add a little soy sauce if desired.
