Easy Berry Shortcakes (Dairy-Free)

Instructions
  1. Wash the fruit; cut the top off the strawberries and cut into halves or quarters depending on their size and your preference.
  2. Open up the 2 CHILLED cans of coconut milk and put the solid (only) parts at the top of each can into a cold bowl, add the powdered sugar and whip for 3-5 minutes on high in a standing mixer (5-10 if using a hand mixer) or until it forms a nice, smooth, thick whipped cream texture. NOTE: chill your beaters in the freezer and bowl and coconut milk in the refrigerator first; it whips up nicer with everything cold.
  3. Open the package of dessert shells and then assemble your desserts by spooning whipped cream into the shell, toping with as much or little fruit as you desire, then topping with a little more whipped cream and then topping that with a piece of fruit. I serve extra berries and whipped cream on the side.
