Dairy-Free Caramel Apple Cake
A light and delicious dairy-free apple cake, topped with dairy-free caramel sauce. A delightful treat for breakfast, dessert or afternoon coffee. Try a little caramel sauce in your coffee too … yum!
Instructions
Dairy-Free Apple Cake
  1. Preheat oven to 350 degrees F
  2. Grease one 9 inch pie pan.
  3. Combine the flour, sugar, and salt.
  4. Stir in the fruit and the pecans, and toss to coat.
  5. Stir in the butter, beaten eggs and vanilla.
  6. Spread the batter into the prepared pan.
  7. Bake at 350 degrees F for 40 minutes, or until a wooden pick inserted near the center comes out clean.
  8. Top with caramel sauce; serve warm.
Dairy-Free Caramel Sauce
  1. Mix the brown sugar, coconut milk creamer, vegan butter and salt in a saucepan over medium heat; cook 5 minutes while whisking gently. Then slowly bring to a boil; turn back down to medium-high as soon as it starts to boil, and continue gently whisking for 2-3 minutes, being careful not to let it burn.
  2. Add the vanilla and cook another minute to thicken further. Turn off the heat, cool slightly and pour the sauce into a jar or other glass container. Refrigerate until cold (it should get fairly thick). You can also serve it warm (like I did in the photo above; it won’t be as thick as it will be after it has been refrigerated, but it will be delicious!) Use the leftover caramel sauce for your coffee!
