Pumpkin Snickerdoodle Cookies

Instructions
  1. Preheat oven to 350 degrees F and lightly grease cookie sheets with vegan butter
  2. Beat vegan butter and sugars until fluffy
  3. Stir in pumpkin puree, orange zest, egg and vanilla
  4. Mix in flour, baking soda, baking powder and all the spices
  5. Mix sugar and cinnamon for topping in a separate bowl
  6. Roll dough into one-inch balls or use cookie scoop
  7. Roll balls in cinnamon-sugar mixture and place on cookie sheets
  8. Flatten each cookie with the bottom of a drinking glass
  9. Bake 9-11 minutes in oven
