Instant Pot Whole Rosemary Chicken and Vegetables
Spend a few minutes prepping this meal, put it all in the Instant Pot and let it do the work for you. 40 minutes later, your Instant Pot Whole Rosemary Chicken and Vegetables dinner will be done! The chicken is juicy, the vegetables are delicious and the broth is divine! This meal is also paleo diet-friendly, gluten-free and dairy-free!

Instructions
  1. Place all the vegetables in the Instant Pot and add 1 cup of chicken broth
  2. Coat the inside of the chicken with the salt and then place the garlic, rosemary and half the sliced onion inside the chicken
  3. Place the chicken on top of the vegetables and add a little salt and pepper
  4. Close the Insta Pot; hit manual for 30 minutes; let it naturally release pressure for 10 minutes; then release the steam
  5. If you want a prettier chicken and/or eat the chicken skin, pull the chicken out and place on a pan and broil for 5 minutes in your oven.
